Case Study: UK wheat to bread supply chain

The study maps and analyses the industrial (more global) wheat to bread supply chain and two sub-­‐chains with more local characteristics.
The vast majority of UK bread is sold by supermarkets, rather than specialist bakers and the chain produces nearly 11 million loaves each day that are sold to 99% of British households.
